Mashed Cheesy Potato Casserole with Ham Recipe
Cheesy potato casseroles come in different forms and styles and this particular recipe exemplifies the variety of combinations that are possible with cheesy potato casseroles. Apart from being tasty, mashed cheesy potato casserole preparation is also quite straightforward.
Ingredients:
- 2-3 cups of mashed potatoes
- 1 ½ cups of diced ham
- 1 tablespoon of butter
- ½ cup of milk
- ½ cup of celery (sliced)
- ½ cup of shredded onions
- ½ can of cream of celery soup
- Salt
- Freshly ground black pepper
- 1 egg
- ¼ cup of chopped green onions
- 3 oz of shredded cheddar cheese
- ½ tablespoon of chopped parsley
Preparation:
- Melt butter in a small frying pan and while stirring, add the onions and celery and fry lightly till they become soft and tender.
- While still on medium low heat, add ham and cook till it becomes light brown. Pour ¼ of milk, salt, pepper and cream of celery soup and stir evenly.
- In another bowl, beat the egg with the mashed potatoes, add the remaining milk, parsley and green onions together with about half of the cheese and mix thoroughly.
- Prepare the casserole dish by lubricating with butter. Pour in the ham mixture in the frying pan followed by the potato mixture and lastly, sprinkle the remaining cheese on top.
- Place the cheesy potato casserole in the oven and bake at 350 degrees (preheating is preferable) for 45 minutes till it becomes light brown.
